From 31 October to 15 November, the 46th edition of the National Prized White Truffle Fair introduces a brand-new format: three weekends – 31 October and 1 November, 7–8 November and 14–15 November – dedicated to celebrating the truffle and its territory. Among this year’s major new attractions are the “Palazzo del Bianco”, the Salone dell’Alta Conservazione and a special gastronomic focus on the pairing of pizza and truffle.

 

Three weekends, six days and an entire city celebrating the Prized White Truffle. “Bianco Pregiato” is changing pace for its 46th edition, introducing a completely new format: instead of a single weekend, the event will take place over three – 31 October and 1 November, 7–8 November and 14–15 November 2026 – bringing the flavours and culture of one of the Upper Tiber Valley’s most precious and distinctive products to Città di Castello for more than two weeks.

This is the main innovation of Bianco Pregiato 2026, the National Prized White Truffle Fair, a long-established event dedicated to the trifola, as the truffle is traditionally known locally, and to the culture that has always surrounded this extraordinary product.

The new format is designed to broaden both the experience and the story of the event, offering visitors more opportunities to come to Città di Castello, discover the surrounding area and, above all, explore the world of truffles: from those who search for them in the woods every day to those who select and sell them, and the chefs who interpret them through their cuisine.

One of the main new features of the 2026 edition will be the “Palazzo del Bianco”, a new area entirely dedicated to the star of the event: the Prized White Truffle. It is a space designed to place even greater emphasis on the product and give visitors the opportunity to discover truffle culture through direct contact with the people who know it best.

Here, visitors will be able to discover, taste and purchase Prized White Truffles, meet producers and professionals from the sector, and learn more about the characteristics, seasonality, quality and uses of an ingredient that represents an important gastronomic and economic heritage for the entire Upper Tiber Valley.

In Città di Castello, truffles are much more than a gastronomic delicacy. They are part of the area’s history, culture and everyday life. The Upper Tiber Valley is particularly suited to truffle production, and truffle hunting remains a deeply rooted tradition. The area is home to more than 1,500 truffle hunters and over 3,000 dogs – figures that demonstrate just how integral the world of truffles is to local identity.

This culture has received further recognition through the inclusion of “Truffle hunting and extraction in Italy: traditional knowledge and practice” on UNESCO’s Representative List of the Intangible Cultural Heritage of Humanity.

The Prized White Truffle is the most eagerly awaited star of autumn, but the area also produces other varieties throughout the year, from the bianchetto truffle to black truffles and summer truffles. This creates a relationship with truffle culture that extends far beyond the days of the event itself.

Bianco Pregiato takes this identity and brings it into the heart of Città di Castello, transforming the historic centre into the event’s natural stage.

The fair therefore also becomes an opportunity to discover the city, its historic buildings and squares, and an artistic heritage spanning different periods, from the Renaissance to contemporary art, with works and places associated with Raphael, Luca Signorelli and Alberto Burri.

Alongside the truffle and the territory, gastronomy will play a central role in the 2026 edition. One of the programme’s special focuses will explore a pairing that is both immediate and capable of opening up new possibilities for flavour: pizza and truffle.

Two great expressions of Italian food culture will come together in Città di Castello, with ingredients, technique and experimentation taking centre stage. Pizza will offer a new way of experiencing the Prized White Truffle: a popular, contemporary food meeting one of the most precious ingredients in Italian cuisine.

The aim is to show how truffles can engage with different gastronomic styles while maintaining their distinctive identity. Doughs, cooking techniques, textures and ingredients will interact with the truffle’s aromatic profile, creating interpretations in which balance is essential. It is also a way of making the Prized White Truffle more accessible to a wider audience, without compromising on quality.

The other major gastronomic innovation at Bianco Pregiato 2026 will focus on a sector currently enjoying renewed interest and experimentation: premium preserved foods.

Città di Castello will host the Salone dell’Alta Conservazione, dedicated to products distinguished by the exceptional quality of their raw ingredients and by the ability to preserve their characteristics, aromas and textures.

Premium preserved specialities will take centre stage, carefully selected to showcase a sector that in recent years has gained an increasingly prominent role in fine dining.

 

 

Fresh and preserved, tradition and experimentation, woodland and kitchen, pizza and truffle: these are just some of the dialogues through which Bianco Pregiato 2026 will broaden its gastronomic narrative.

At the same time, everything that has shaped the identity of the National Prized White Truffle Fair over the years will remain at its heart. Visitors will be able to meet the people behind the world of the trifola, taste and purchase Prized White Truffles, discover local produce and take part in gastronomic events and opportunities to learn more about truffle culture.

Previous editions of the fair have brought together the truffle supply chain, farmers, chefs, restaurateurs, associations, local community organisations, Slow Food Presidia and other local groups through food markets, tastings, cooking shows, workshops, sensory analysis sessions and events dedicated to truffle culture. In 2026, this heritage will be carried forward and given new momentum through a broader format.

Three weekends – 31 October and 1 November, 7–8 November and 14–15 November – turning the annual celebration of the Prized White Truffle into an experience to enjoy over time.

From 31 October to 15 November 2026, the Prized White Truffle will once again become the thread connecting visitors to Città di Castello and the Upper Tiber Valley – but this time with one major difference: not just one weekend, but three opportunities to experience them.
