For more than ten years, Sabrina Catacchini has guided the growth of a business that has become a landmark for breakfasts, lunch breaks, aperitifs, and social gatherings in the heart of the Valtiberina valley.

This happens when there is not just a job to be done behind the counter, but a vision capable of evolving and responding to the changing needs of the people who experience it every day. This is the story of Il Panificio, located in the Santa Fiora district of Sansepolcro, and of its owner, Sabrina Catacchini, who since 2011 has led the venue through a steady process of growth, transforming it from a simple bread shop into a popular destination for breakfast, lunch breaks, aperitifs, and moments of conviviality.

Today, anyone entering the establishment immediately senses a welcoming and dynamic atmosphere. It is hard to imagine that everything began as a much simpler business, focused almost exclusively on selling bread. Yet that is exactly where the journey started.

“When I took over the business, it was mainly a bread retailer,” Sabrina recalls. “Over time, I realized that people were looking for something more: a place to stop, enjoy breakfast, have a good lunch, or simply relax for a while. So we began to grow, step by step.”

This growth did not happen overnight. It was built patiently and with determination. First came the coffee bar service, then the breakfast offerings, followed by snacks and light meals. Finally, six years ago, the introduction of a full kitchen completed a transformation that now allows Il Panificio to accompany customers throughout the entire day.

The location itself has played an important role in this evolution. Situated in an area frequented daily by workers, sales representatives, and business owners, the venue has developed its identity around the needs of people who have limited time but do not want to compromise on the quality of their meals. This is one of the aspects Sabrina is most proud of.

“We have always tried to combine speed and quality. Many people who come here for lunch have very little time, but that doesn’t mean they should settle for something mediocre. We want every customer to find a quick service, but also great attention, excellent food, and genuine courtesy.”

 

 

Today, the kitchen is one of the business’s greatest strengths. Every day, dishes are prepared fresh on site by the venue’s cooks, with a focus on seasonal ingredients and locally sourced products. The menu changes continuously with the seasons and offers a wide variety of options, ranging from pasta dishes and large salads to cold plates and traditional specialties, while also accommodating customers with specific dietary requirements.

The same commitment to quality can be found in the breakfast offerings. Croissants and savory pastries are delivered fresh every day from specialized bakeries, while the counter is filled with homemade cakes, focaccia, pizza, and many other specialties that accompany not only the early morning hours but also breaks throughout the day.

Alongside its dine-in service, Il Panificio has developed increasingly close collaborations with local businesses over the years. Every morning, the daily menu is sent to companies in the area, and meals are delivered directly to workplaces, providing a practical solution for those who want to eat well without interrupting their workday. But food quality is only part of the story.

Another key factor behind the success of Il Panificio is its focus on hospitality. Behind the counter works an all-female team of seven professionals who share the same philosophy: fast service, availability, and a smile always ready to welcome customers. This positive atmosphere naturally reflects on the experience of everyone who visits the venue.

“I care deeply about the environment we have created,” Sabrina explains. “People should feel comfortable here, regardless of why they come in. Whether it’s for a quick coffee, a business lunch, or an aperitif with friends, our goal is always to make them feel welcome.”

 

Contributing to this feeling is the spacious outdoor area, particularly appreciated during the warmer months. It provides the perfect setting for an open-air breakfast, a relaxing lunch break away from the daily rush, or an aperitif with friends, transforming the venue into a place of meeting and social interaction as well as dining. Customers also greatly appreciate the large parking area located directly in front of the venue, a convenience that makes every visit easier. Both the outdoor space and the indoor private room can also be reserved for private or corporate events.

As afternoon gives way to evening, Il Panificio takes on yet another identity. Once the working day is over, many customers choose to stay for an aperitif, accompanied by charcuterie boards, crostini, and other specialties prepared with the same care that characterizes the entire gastronomic offering.

Perhaps it is precisely this ability to adapt to different moments of the day that best defines the venue’s identity. Over the years, it has evolved without losing its authenticity, maintaining a strong connection to its roots while continuously expanding its services and enhancing the quality of the experience it offers.
