In the heart of Garfagnana, the Marovelli Dairy becomes the headquarters of excellence of the cultural and sensory project ‘La Penisola dei Sensi’, a research hub that tells the story of the territory through smell, food and the regeneration of artisan crafts. The proposed experiences are not simple visits, but sensory paths designed and curated by Romina Marovelli – sommelier and Onaf expert – who guides participants on a unique journey through tradition, history and well-being.
Alba Lattica – The Olfactory Walk to Dawn
Among the most evocative experiences of the “From Dawn to Sunset” format is Alba Lactica: an olfactory walk at dawn in the surroundings of the dairy, among native herbs such as dandelion, sage and helichrysum, which have been the basis of peasant and monastic culture for centuries.
The sensory immersion continues with the entrance to the dairy laboratory: the participants wear the cheesemaker’s uniforms and observe the stages of milk transformation live.

Lactic Sunsets – The Magic of Seasoning at Sunset
If the sunrise awakens the senses, the sunset sublimates them. Tramonti Lattici takes place in the late afternoon, and celebrates the maturation of cheese as an essential phase for aroma and structure.
In a relaxed atmosphere, glasses and cheese with cultivated chocolate and gin in a refined game of contrasts. In the background, the Verrucole Fortress and the villages light up with golden light, while the body relaxes on a panoramic swing: an experience that involves all senses.
Olfactory Walks and Historical-Cultural Itineraries in Castelnuovo
In Castelnuovo, the Smellwalks of La Penisola dei Sensi start from the cheese shop and intertwine with the symbolic places of history: the convent, the theatre, the Rocca dell’Ariosto.
Romina Marovelli accompanies the participants on a journey that highlights the duality of food: on the one hand, a symbol of care and spirituality in monasteries; on the other, representation of power in the ducal courts.
