On December 19th, the historic Teatro Niccolini in Florence will host the first edition of “Novo”, the new annual event created by the Chianti Classico PDO Olive Oil Consortium to present the fresh olive oil of the new harvest.

The 2025 edition carries a special meaning: the Consortium celebrates its 50th anniversary and 25 years since obtaining the PDO certification—two milestones that reflect a long journey of protection, research, and continuous improvement in quality.

 

 

A unique chance to taste the new Chianti Classico oils

“Novo” will offer the public – enthusiasts, operators and the curious – the opportunity to preview the new Chianti Classico DOP oils of the 2025 campaign. Very fresh, intense, recognisable oils, capable of expressing all the complexity of the territory between Florence and Siena, where today the denomination counts over 250 producers and more than 3,800 hectares of olive groves.

The event will feature a signature dinner by chef Andrea Perini, renowned for his cuisine centered on extra virgin olive oil.

On stage will be Gionni Pruneti, President of the Consortium, together with representatives of the agricultural world, institutions, and the producers of the Gallo Nero territory.

 

 

More than an ingredient: a landscape in a bottle

Chianti Classico PDO olive oil is far more than a condiment. It is a piece of Tuscan culture: landscape, craftsmanship, and rural heritage concentrated in a single product.

And this, in my opinion, is the greatest strength of the denomination—its ability to grow while remaining authentic, rooted, and true to its identity.

As Pruneti highlighted: “Novo is a moment of pride and sharing. Chianti Classico PDO olive oil embodies quality, identity, and sustainability.”

A statement that, honestly, sums up the spirit of the event well.

“Novo” is not only a celebration of a new harvest, but an opportunity to reconnect people with the world of olive oil –  its culture, its values, and the deep relationship between land, tradition, and flavour that defines the Chianti Classico region.
