Faccendi receives the prestigious recognition of APEI Ambassador, a title that represents not only an honour, but also the merit of a path built with passion, commitment and dedication: an important goal that follows the Cake Star 2023 winner award and the the 2 Gambero Rosso Cakes Prize in 2025. We went to visit him in his scenic restaurant near Quarrata, in the Pistoia countryside.

 

 

Francesco Faccendi, born in 1973, is today one of the best Italian pastry chefs specialized in the processing of chocolate and large leavened products. Becoming an APEI Ambassador means becoming part of a community of pastry chefs of excellence and contributing to the development and enhancement of the Italian pastry art.

 

For us he has set up an imaginative and tasty buffet with sweet and savoury patisserie that immediately puts us in a good mood; in short, he welcomes us to his partner Carlotta Malinconi with whom, in 2012, he inaugurated the artisan chocolate shop ‘Faccendi Chocolate’ thanks to the experience and knowledge acquired over the years. The two draw inspiration from the tradition of French and Italian master chocolatiers – guided by Francesco’s decades of experience as executive chefs.

 

We came here, however, to meet “Rosso Segreto”, the creation that won over the APEI jury: “A dessert that enraptures you at first glance and even more so at the first taste. It has a soft and enveloping heart, enclosed in a refined shape – and tells of a search for excellence in every detail”, they tell us enthusiastically.

 

 

We tasted the miniature version – to tell the truth more than a piece! – and it was an explosion of taste balanced by a powerful balance and reference of flavours.

 

“The emotions you feel in these cases are immense – said Francesco Faccendi – and being part of this group of excellence, together with the best pastry chefs in Italy, is something priceless. Sharing this journey with them is beautiful and priceless. I am proud to be able to start this new experience, certainly challenging but full of precious moments.”

 

This recognition marks the beginning of a new chapter in Francesco’s career, who will continue to carry on his passion and experience to contribute to the growth and enhancement of the Italian pastry sector, as well as live the dreams and daily adventures of his pastry shop in Quarrata, named Tantarobabyfaccendi.
